About Nidia
I worked in the restaurant industry including fine dining for almost 4 years where I gained extensive knowledge on food and beverage. I also worked in and joined food coops (natural grocers) for about 8 years where I gained substantial knowledge on natural, organic, artisanal, local, sustainable and culturally diverse foods. I am first-generation Mexican-American and have been making traditional Mexican foods since I was a child. I love gardening and growing my own organic produce. I am an advocate for fresh and local ingredients. I struggle with IBS and I like to maintain my weight so I tend to be very aware of portion control, eating balanced meals and following a high fiber and low gluten and low dairy diet. I dabble in herbalism and love to incorporate fresh herbs in my food for both flavor and health reasons.
