About Joey
Joey's chocolate journey began as an idea to add something special to offer at his coffee shop. He began his first coursework with Ecolé Chocolat's Professional Chocolatier program in 2016. Subsequent coursework included Chocolate Quality and Shelf Life as well as advanced work with Cannabis and Chocolate.
After selling the coffee shop, Joey created Little Bird Chocolate a micro-batch chocolatie company that uses only the freshest and finest ingredients available with no unnecessary preservatives.
In October 2019, Joey's Bourbon Honey Truffle won the Best Food Category in Our State Magazine's Made in NC Award. I created a custom chocolate bar for Kimpton Cardinal Hotel that was featured in Travel + Leisure's list of Coolest Secret Amenities.
